I had such a nice weekend! On Friday I made a fabulous carrot cake
Ingredients: 1 cup castor sugar
1 cup plain flour
1 and ½ cups grated carrots
2 eggs
½ cup olive oil
½ teaspoon bicarbonate of soda
½ teaspoon baking powder
1 teaspoon cinnamon powder
(Note: Use ½ cup self-raising flour and ½ cup plain flour if necessary)
Method
Preheat oven to 180°C (350°F).
Line a standard loaf tin or oblong cake tin with baking paper.
Place all ingredients into a bowl and beat well.
Pour mixture into cake tin.
Bake for approximately 45 minutes until a skewer inserted into the cake comes out clean.
Remove the cake from oven and allow to cool.
Turn onto wire rack and allow to cool completly before icing
On Saturday, myself and bf went for nice breakfast in a little cafe in Gospel Oak then we went to Hampsted Heath with friends and went for a swim in one of the outdoor ponds; not as cold as I thought it was going to be, but certainly not 21 degrees, which is what the thermomater next to the pond said! We spent about 3 hours lying around in the sun, swimming and as we were leaving to make our way home, we heard music coming across a hill in the distance. We followed the sounds and found a free festival, celebrating (we think) national swedish day, we stayed for a few beers then headed back to my place. My hair had gone completly wild from swimming and not fixing it afterwards. I look like a crazed muffin when I don't straighten it, which is not a good look for anyone!
Sunday myself and bf took a walk around Camden market, very cruisey day. We had noodles in the market and wandered around for the afternoon, and then the weekend was over
